Suzani puts vegan in the spotlight with a cuisine that is 90% vegetarian, gourmet and full of ideas. The team can adapt certain dishes to vegan versions and regularly offers gluten-free options (on request).
The menu changes every week, with new starters and signature dishes: veggie ramen, spinach and shiitake lasagne, black rice with satay sauce, pumpkin tagliatelle… Not forgetting the veggie bowls of the moment, combining vegetables and cooked cereals.

2. Restaurant Paute Local bistronomy with a focus on plants

Whilst not a 100 per cent vegetarian restaurant, Paute shows a genuine appreciation for plant-based cuisine: every menu features a vegetarian starter and a vegetarian main course. On the plate, you’ll find bistronomic cuisine that’s local and seasonal, inspired by the “rich and demanding” natural environment of the Béarn region, with a genuine appreciation for the ingredients. Les Amants du Marché is an organic, 100 per cent vegan restaurant in Pau, the perfect place to treat yourself to cuisine that is both indulgent and healthy. Everything is homemade using entirely organic ingredients, most of which are locally sourced. The restaurant offers a creative and comforting approach, proving that plant-based food can be flavourful, generous and full of great ideas… without compromising on the pleasure of eating.

4. Cueillette de l'Aragnon Seasonal cooking to the rhythm of the harvest

At the heart of La Cueillette, the Bistrot de la Cueillette de l’Aragnon offers a welcoming dining experience where vegetables take centre stage, cooked using whatever is growing in the fields. Chef Henri showcases freshly picked vegetables and seasonal fruit, in a bistro-style setting that evolves with the harvests. At lunchtime, the menu features a ‘dish of the world’ inspired by his travels, with a menu that changes every week. And to prolong the pleasure, a visit to the shop selling local produce is a must.

7. JÒÏA MÂA Carte blanche for plants, with a surprise tasting

At JÒÏA MÂA, vegetables take centre stage in a ‘surprise’ format with the ‘Vegetables in the Spotlight’ dish, available for lunch and dinner all year round, with the menu changing with the seasons. Designed as a carte blanche, it combines a starchy side dish with a selection of seasonal vegetables, prepared in different ways to offer a variety of flavours and textures. The dish can be adapted to suit individual tastes and any allergies or intolerances, and at least one vegetarian starter is also available à la carte.

8. The Pyrenees Plant-based and indulgent

A five-minute walk from Place Clemenceau, Grignote is a cosy spot where you can pop in for breakfast, lunch or an afternoon snack. Here, everything is 100 per cent vegetarian and homemade, following the rhythm of the seasons and using fresh, local produce wherever possible. And the culinary delights continue at the La Petite Cueillette workshop and shop, where Eva makes her artisanal jams, which have won her the title of World Champion. A great reason to pop out with a little jar under your arm!

10. L'Aragon Brasserie facing the Pyrenees, gourmet veggie corner

At L’Aragon, people come as much for the iconic location on Boulevard des Pyrénées – and its view – as for the friendly brasserie atmosphere. The restaurant prides itself on fresh produce and a generous selection of homemade dishes, all served in an atmosphere inspired by Parisian brasseries.
Good news: there’s plenty on offer for vegetarians, with a dedicated veggie section and comforting dishes such as the tofu and pulses cassoulet, not to mention some superb desserts (roasted pineapple, for example). And to prolong the pleasure, the venue is bustling all day long: breakfast, a tea room, homemade pastries, followed by an aperitif atmosphere with tapas in the evening.
