Our best galettes The top 5!

As soon as the festive season draws to a close, our bakers and patissiers are in a frenzy: it’s time for the galette des rois! So we took it upon ourselves to test these delicious treats for you, to establish our top 5 of the best “crowns” and other “Parisian” galettes in Pau Pyrénées.

Brioche or frangipane?

Whether they’re “Parisian”, flaky with butter and filled with frangipane, or “Southern” in the shape of a brioche and perfumed crown… galettes are always a good excuse to get together on Epiphany, for a moment of sweetness and indulgence. Traditionally in France, they take the form of a crown, with a soft crumb scented with orange blossom or aniseed, topped with pearled grains of sugar; they can also feature a few candied fruits or roasted hazelnuts… But talking about them is good, tasting them is better, so here are our five favorites!

1. Constanti House The scent of orange blossom

Soft and subtly perfumed, the traditional Constanti wreath exudes the delicate scent of orange blossom. On top, sugar pearls mixed with praline enhance the sweetness of the brioche dough. The “Parisian” galette is not to be outdone; its flaky crispness conceals an almond cream with a hint of rum… A real treat!

2. Boulangerie-pâtisserie Grangé An embarrassment of riches

With their modern, revisited decorations, Grangé’s galettes are unmistakable. The“Traditionnelle” crowned with brioche and flavored with orange and lemon, the“Suisse” with chocolate chip frangipane, or the classic“frangipane“, with its crunchy puff pastry and vanilla rum almond cream. But the house’s signature galette is unquestionably the“Gianduja”, with hazelnuts from the South-West and homemade spread. In short, there’s an embarrassment of riches to choose from for all the gourmands who pass through this charming establishment!

3. Adiiou House Béarnaise sweets

Frangipane or brioche, the house’s galettes are golden and puffed up to perfection. Our favorite is the crowned version, with its roasted hazelnuts and candied fruit slivers… a delight!

Tasting

While brioche cakes should be eaten as fresh as possible to retain all their softness, puff pastry cakes can be placed in the oven for a few minutes and eaten warm, to release all their aromas more easily…

Support

Traditional or Parisian, galettes go perfectly with a hot drink at tea time. A chilled Jurançon wine will also be a welcome addition for those with a sweet tooth.

4. Boulangerie-Pâtisserie Hortense The old-fashioned way!

Chez Hortense’s galettes are just like the house: traditional, authentic and generous. The flaky version is essentially made with local products, accompanied by high-quality butter, IGP and AOP certified. The dough is left to rest for two days to produce a light, crisp and tasty galette.

5. Bergouli Bakery A taste of reviens'y!

Haaaa, the galettes from Bergouli! At Bergouli, you’ll only hear about the traditional galette, the brioche. Its softness, lightness and orange blossom fragrance are unrivalled; the baking is perfect… timeless! There’s a long queue, lots of anticipation, reservations and the hope that there’ll be more and more… and you just can’t get enough!
